The Institute of Food Technologists (IFT) convened a panel of experts to consider how comprehensive traceability in the food supply chain is vital to food safety and to examine the technology available to achieve this.
As a result IFT came up with a report outlining their recommendations for the data elements that need to be traced. These recomendations include identifying Critical Tracking Events (CTE) which are the times where tracking data must be captured and a listing of the data that should be included. It is suggested thast this data be stored electronically so it can be provided to FDA within 24 hours of any request.
